Easy, Nutritious, Yummy, 15-Minute Dinner Recipe ---your belly is going to love this!
Last week I had what potentially could have been "one of those nights". At 5:00 PM I, realized I had nothing ready for dinner. Already my kiddos and hubby were asking 'when dinner would be ready?'. It was too late for nutritious take-out, and frankly not in our weekly budget. Therefore, I grabbed a head of cauliflower, began to thaw 1 pound of frozen, skinless cod...and hoped for the best. The end result? My picky children loved the dinner, which was ready in less than 15 minutes! My husband Ben? Agreed that this was a dinner acceptable for our entire extended family, the highest compliment I could hope for. The best part? Aside from it being both yummy and easy, it is also very nutritious! This recipe, which serves 4, is now one of my favorite 15-Minute Dinners! Side Note: Please forgive any typos...I am trying to type this up as quickly as I can while my little one is a-nap. Also, if you have any tips on quick dinner time meals, please share. This is always an on-going effort at the Martens house-hold.
Ingredients:
1 pound of fresh or thawed frozen cod fish
.5 cup of milk (I happened to use my toddlers whole milk in the fridge)
.5 cup of flour (which ever type of flour your family prefers --oatmeal, all purpose, tapioca, rice, almond...)
2 slices of ground-up bread (which ever type of bread your family prefers --rice, wheat, tapioca...)
.5 cup of parmesan cheese (I also threw in some cheddar cheese, b/c my son loves mild cheddar cheese)
1 teaspoon or a few shakes of dill
2-3 tablespoons of butter
Dash of salt
Dash of pepper
-Cauliflower
-Olive Oil
-Minced Garlic
Recipe for Fish:
Step 1: Preheat Oven to 450 Degrees F
Step 2: Cut clean-fish into half-an-inch-thick serving pieces, and further divide / cut into 2-3 inch sticks or servings
Step 3: In a food processor mix / grind-up bread, cheese, dill, butter, salt & pepper
Step 4: Place Milk, Flour and Food Processor Mix from Step 3 in 3 separate bowls
Step 5: Dip fish in milk, then dip fish in flour, next dip fish in milk (again) and last dip fish in food processor mix
Step 6: Place fish (uncovered) on a baking sheet lined with parchment paper (watch closely for fire), aluminum foil or greased
Step 7: Place baking sheet on middle shelf
Step 8: Bake fish for 4-6 minutes per half inch thick and until fish flakes when easily tested with fork.
Recipe for Cauliflower:
Step 1: Preheat Oven to 450 Degrees F
Step 2: Place chopped cauliflower on baking sheet
Step 3: Drizzle with olive oil
Step 4: Sprinkle with minced garlic
Step 5: Place cauliflower in oven on rack underneath fish, cook along with fish
